Eclairs
Eclairs are a classic dessert, loved by many for their fluffy texture and delicious filling. This eclair recipe is not only simple but also filled with memories, stories, and secrets passed down from generation to generation. Whether you've tried different recipes without success or want to perfect the art of making eclairs, you've come to the right place. I will share all the tricks I've learned from my mother to achieve the most delicious eclairs, perfectly golden and filled with a smooth cream.
Preparation time: 30 minutes
Baking time: 20 minutes
Total time: 50 minutes
Number of servings: Approximately 12 large eclairs
Ingredients
For the dough:
- 2 cups water
- ½ cup oil
- 2 cups flour
- A pinch of salt
- 5 eggs
For the cream:
- 2 eggs
- 150 g sugar
- 3 tablespoons cornstarch
- 2 cups milk
- 3 drops vanilla essence (or vanilla essence with butter)
- ¼ pack of butter (approximately 60 g)
For the glaze:
- 100 g chocolate (dark or milk, according to preference)
- 50 ml milk
- A cube of butter (approximately 20 g)
Step by Step
1. Preparing the dough:
Start by boiling the water, oil, and a pinch of salt in a saucepan. This is the essential stage, as the water and oil will help the dough achieve a perfect texture. Wait for it to reach a boil, then remove the saucepan from the heat.
2. Adding the flour:
Now add the flour to the saucepan all at once. Use a wooden spoon to mix quickly until the dough pulls away from the sides of the saucepan. This is a key technique, and if you're wondering why it's important, the answer is that it helps develop the structure of the dough.
3. Cooling the dough:
Let the dough cool slightly so that it doesn't cook the eggs when you add them. It's essential to have a thick, creamy consistency, so don't rush with the eggs. Add them one by one, mixing well after each until you achieve a smooth dough.
4. Preheating the oven:
Preheat the oven to 200°C. It's important for the temperature to be high at the beginning to allow the eclairs to rise quickly.
5. Shaping the eclairs:
Use a piping bag or spoon to form mounds on a baking sheet lined with parchment paper. Whether you choose round or elongated shapes, make sure to leave enough space between them, as they will double in size while baking.
6. Baking:
Place the tray in the preheated oven. Now comes the secret: keep the heat high at first for 10 minutes, so the eclairs rise, then reduce the temperature to 180°C and continue baking for about 10 minutes until they turn golden. Do not open the oven during baking, as the eclairs may deflate. Watch them through the window!
7. Preparing the cream:
While the eclairs are baking, you can prepare the cream. Heat one cup of milk in a pot and, in the meantime, mix the eggs with the sugar in a separate bowl. Add the cornstarch and vanilla essence, then add the other cup of milk. When the milk starts to boil, pour the egg mixture into the pot and stir continuously with a whisk until it thickens, having a consistency similar to thick cream. Once the cream is ready, remove it from the heat and let it cool. When it's warm, add the butter and mix well.
8. Preparing the glaze:
To give the eclairs a special look, you can prepare a chocolate glaze. Melt the chocolate together with the milk and butter cube over steam, stirring continuously until you achieve a smooth consistency. Set the glaze aside to cool slightly.
9. Filling the eclairs:
Once the eclairs have completely cooled, use a knife to gently cut them in half or to make a small hole in the bottom. Fill each eclair with the cooled cream using a piping bag for an elegant look.
10. Finishing the eclairs:
After filling all the eclairs, pour the chocolate glaze on top or use a spray for a professional appearance. Let them sit for a while for the glaze to set.
Serving suggestion:
Eclairs are perfect to be served on any occasion, whether it's a festive meal or a get-together with friends over coffee. You can pair them with a freshly brewed cup of coffee or a fragrant tea to complement their taste.
Useful tips:
- Make sure all ingredients are at room temperature before you start preparing.
- If you want to experiment, you can add cocoa to the dough for chocolate eclairs or try different flavors for the cream, such as rum or coffee.
- Store the eclairs in an airtight container to keep them fresh.
Nutritional benefits:
This eclair recipe is rich in protein due to the eggs, and the butter adds healthy fats. Eclairs can be a lighter dessert option if consumed in moderation.
Your eclairs will surely become everyone's favorite! I encourage you to try this simple recipe and share the final result with your loved ones. Don't forget to write to me about how they turned out! Happy cooking!
