Today, I will share this cauliflower dish recipe, perfect for a quick dinner, but also to bring a touch of memories to your plate.

Total preparation time: 40 minutes
Preparation time: 10 minutes
Cooking time: 30 minutes
Number of servings: 4

Ingredients:

- 1 medium cauliflower (approximately 600-800 g)
- 1 small onion
- 3 cloves of garlic
- 1 medium carrot
- 2-3 tablespoons of tomato paste
- 1 bunch of fresh parsley
- Salt and pepper to taste
- Olive oil or sunflower oil for sautéing

Preparation steps:

1. Preparing the cauliflower:
Start by breaking the cauliflower into small, even florets. Make sure they are small enough to cook evenly. Rinse them under cold running water to remove any impurities.

2. Boiling the cauliflower:
Place the cauliflower florets in a pot of boiling water with a pinch of salt. Boil for 5-7 minutes until they become slightly tender, but not mushy. We want to keep the crunchy texture. Check with a fork to see if it goes in easily but without crumbling. Drain the cauliflower and set aside.

3. Preparing the vegetables:
In a large skillet, add 2-3 tablespoons of olive oil and heat over medium heat. Chop the onion and carrot finely. Add the onion to the skillet and sauté for 2-3 minutes until it becomes translucent. Add the grated or diced carrot and sauté for another 5 minutes.

4. Adding the garlic:
Finely chop the garlic and add it to the skillet, stirring well to release its aroma. Sauté for another 1-2 minutes, being careful not to burn it.

5. Combining the ingredients:
Add the cauliflower florets to the skillet over the sautéed vegetables and mix well. In a cup, dissolve the tomato paste in 200 ml of water and pour this mixture over the cauliflower. If necessary, add more water until the cauliflower is almost covered.

6. Final boiling:
Let the mixture simmer on low heat for 15-20 minutes, covered with a lid. Stir occasionally to prevent sticking. In the end, adjust salt and pepper to taste.

7. Finishing and serving:
Chop the fresh parsley and sprinkle it over the dish before serving. This not only adds a vibrant look but also a fresh note.

Serving suggestion:
The cauliflower dish pairs perfectly with grilled chicken or pork roast. I recommend serving it alongside a crisp green salad for a pleasant contrast.

Tips and variations:
- You can also add other vegetables like bell peppers or zucchini to enrich the dish.
- If you like a spicier taste, you can add a finely chopped chili pepper along with the garlic.
- A vegan version can include replacing the tomato paste with fresh tomato sauce or tomato puree.

Nutritional information:
This cauliflower dish is rich in vitamins, minerals, and antioxidants, with a low calorie content. A 200 g serving may contain approximately 150 calories, making it an excellent choice for a balanced diet.
