Diplomat Cake with Fruits – A Delicious Indulgence

Preparation time: 30 minutes
Chilling time: 8 hours
Total time: 8 hours 30 minutes
Servings: 16-20 (depending on slices)

The history of this sophisticated and refreshing cake is rooted in pastry traditions, often associated with special occasions and celebrations. The diplomat cake is, above all, a symbol of good taste and the perfect combination of delicious cream and fresh fruits. In this version, I will guide you step by step to create a cake weighing approximately 5 kg, ideal for a birthday or a party, but if you wish to make a smaller one, simply halve the ingredients.

Ingredients:

- 1 liter Hulala whipped cream
- 5 packets Dr. Oetker gelatin
- 1 package ladyfingers (about 24 pieces)
- 1 can pineapple rings
- 1 can peaches
- 1 can strawberries
- 2 kiwis
- 3 oranges
- 2 bananas
- 7 eggs
- 500 g sugar
- 100 ml milk

Step 1: Preparing the Ingredients

Start by preparing all the ingredients. Make sure you have all the fruits, ladyfingers, and whipped cream on hand. Choose fresh, seasonal fruits, as they will not only add a delicious taste but also an attractive appearance to the cake. For example, during summer, strawberries and peaches are fantastic, while in autumn, apples and pears can add a special touch.

Step 2: Preparing the Whipped Cream

Whip the Hulala cream with a mixer until it becomes very thick. This step is essential, as the cream will give the cake a light and airy texture. Once you achieve the desired consistency, refrigerate the cream to firm it up even more.

Step 3: Preparing the Pan

Choose a tall pan suitable for a 5 kg cake. Wash it and rinse it with cold water, then line it with a disposable bag. This will help the cake release easily after it has cooled.

Step 4: Decorating the Pan with Fruits

Slice the fruits into rounds to create an attractive appearance. I used pineapple rings to form a circle at the bottom of the pan. In the center of the pineapple, I added strawberries, and inside the circle, I placed slices of kiwi and orange. Remember, bananas should not be placed on the surface, as they will oxidize and change color. Place them inside the cake.

Step 5: Preparing the Cream

In a bowl, beat the egg yolks with the sugar until you have a smooth mixture. Add the gelatin that you previously mixed with the milk. This combination will be placed in a water bath for about 8 minutes, stirring continuously with a wooden spoon until it thickens. Allow the cream to cool.

Step 6: Assembling the Cake

Whip the egg whites until stiff peaks form, then combine them with the whipped cream and the cooled cream. This will give the cake a light and airy texture.

Now, start assembling the cake! Place one-third of the cream mixture over the fruit decoration in the pan. Then, add some of the diced fruits and half of the ladyfingers soaked in the syrup from the canned fruit. Repeat the process with another third of the cream, more diced fruits, and the remaining ladyfingers. Finally, add the last portion of the cream and the remaining fruits.

Step 7: Chilling and Serving

Cover the cake with a plate and place it in the refrigerator. It is recommended to let it chill overnight to allow the flavors to meld perfectly. Before serving, invert the cake onto a serving platter. This is the most challenging part but also the most rewarding!

Serving Suggestions and Variations

For a touch of elegance, you can add chocolate shavings or a caramel sauce on top of the cake. Additionally, for a more intense flavor, you can add a little vanilla or almond extract to the whipped cream.

This diplomat cake pairs perfectly with fresh lemonade or a glass of chilled white wine.
