Apple Pie – A fragrant and fluffy delight, perfect for any occasion

Preparation time: 30 minutes
Baking time: 40-50 minutes
Total time: 1 hour and 20 minutes
Number of servings: 8-10

The history of apple pie is closely linked to the culinary traditions of many cultures, which have found in seasonal fruits a way to sweeten their lives. This delicious recipe, inspired by my dear friend Julie, is vegan, but can be enjoyed by everyone, regardless of dietary preferences. So, let’s discover together how to prepare an apple pie that will bring smiles to everyone’s faces!

Ingredients

For the dough:
- 14 tablespoons mineral water
- 20 tablespoons oil
- 2 tablespoons vinegar
- 3 tablespoons sugar
- 1 baking powder
- 1 vanilla essence
- Zest of one orange
- 650-750 g flour (adjust the amount according to the consistency of the dough)

For the filling:
- 2 kg apples (choose sweet and fragrant apples, such as Golden or Granny Smith)
- 7 tablespoons sugar
- 5 tablespoons oil
- 2 packets vanilla sugar
- Cinnamon (to taste)
- Powdered sugar (for decoration)

Preparing the filling

1. Start with the filling, as it needs to cool before use. Wash the apples well and peel them. Cut them in half and remove the seeds, then grate them using a large grater.

2. After grating the apples, squeeze out the excess juice. Do not throw away the juice – it is delicious and can be enjoyed as a refreshing drink!

3. In a pan, add the 5 tablespoons of oil and the grated apples. Sprinkle the sugar and vanilla sugar over them. Cook over medium heat for 10-15 minutes, stirring constantly to avoid sticking. The apples should soften and become slightly caramelized.

4. Finally, add cinnamon to taste and mix well. Allow the filling to cool completely.

Preparing the dough

1. In a large bowl, add the 6 tablespoons of oil and 4 tablespoons of flour. Mix well and place the mixture over low heat for 1-2 minutes until you get a thick sauce.

2. In a separate bowl, place the remaining flour. Add the remaining oil, mineral water, vinegar, sugar, baking powder, vanilla essence, and orange zest. Knead well until all ingredients are combined. The dough should be elastic and easy to handle.

3. Divide the dough into two equal parts. Roll each piece of dough into a thin sheet. Moisten each sheet with the oil and flour sauce you prepared earlier.

4. Roll the sheets of dough, then wrap them in plastic wrap and refrigerate for about 2 hours. This step is important for achieving a flakier and easier-to-handle dough.

Assembling and baking the pie

1. After two hours, take the sheets of dough out of the refrigerator. Knead them gently to revitalize, then roll them out again into thin sheets.

2. Evenly spread the apple filling over each sheet of dough, leaving the edges free for easier rolling.

3. Roll each sheet with filling and place the pies in a baking tray lined with parchment paper. You can also use loaf pans to make individual pies.

4. Preheat the oven to a medium temperature (about 180°C) and bake the pies for 40-50 minutes or until they turn golden and fluffy. You will smell the inviting aroma of apples and cinnamon filling the entire house!

5. Once the pies are ready, take them out of the oven and let them cool on a rack. Before serving, dust them with powdered sugar for an elegant appearance and a touch of sweetness.

Possible variations

If you want to experiment with flavors, you can add chopped nuts, raisins, or even a few drops of lemon juice for a pleasant contrast to the filling. You can also try substituting apples with pears or apricots for a different take on this classic recipe.
