We start by gathering the necessary ingredients: 500 grams of fresh or frozen peas, 2-3 cloves of garlic, salt, freshly ground pepper, 3-4 tablespoons of extra virgin olive oil, a large onion, and a little flour to dust the onion.

The first step is to boil the peas. We put the peas in a pot of boiling water and let them cook for about 20 minutes. This time allows the peas to become soft and retain their vibrant color. Once the peas are cooked, we drain them well and transfer them to a bowl. Using a blender or a potato masher, we mash the peas until we obtain a fine paste. It is important to ensure that the texture is smooth, without large chunks that could disrupt the consistency.

After the peas are mashed, we add the crushed garlic, which will bring an extra flavor to the dish. We season with salt and pepper to taste, being careful not to overdo it, as we want to maintain the delicate flavor of the peas. The olive oil will add a note of richness and creaminess to the paste, so feel free to incorporate it gradually, mixing well until everything is homogenized.

Meanwhile, we take care of the onion. We peel and slice it into thin rings. These rings will be dusted with a little flour, which will help them become crispy during frying. We heat a pan with olive oil and add the onion. We fry it over medium heat, stirring constantly, until it becomes golden and crispy. This process will add a contrast of texture and a slightly caramelized flavor that will perfectly complement the peas.

Once all the components are ready, we can assemble the dish. We take slices of toasted or fresh bread, which we spread with the pea paste. On top of this, we place the fried onion rings, creating an appetizing look and an explosion of flavors. Alternatively, we can serve the peas in bowls, garnishing each portion with the crispy onion on top.
