Nut 'Fingerprint' Cookies
In a large bowl, start by mixing the soft but not melted butter with the brown sugar. Use a mixer or a sturdy spatula to achieve a fluffy and airy mixture. This step is essential as the incorporated air will give the cookies a slightly fluffy texture. Gradually add the two egg yolks, mixing well after each addition to ensure they are perfectly incorporated. The vanilla essence will add a delicious fragrance that will transform simple cookies into a true delicacy.
In a separate bowl, combine the flour with a pinch of salt. This mixture of dry ingredients will add structure and help bind the composition. Place the balls on a baking tray lined with parchment paper, and using your finger or the end of a wooden spoon, make a small indentation in the center of each ball. This step is important to be able to add the jam later. After shaping them, place the tray in the freezer to firm up.
If you decide to bake the cookies immediately, fill the center hole with your favorite jam. Quince jelly is an excellent choice, but you can also experiment with other flavors. Bake the cookies in a preheated oven at a moderate temperature for about 20 minutes, until they become lightly golden. If you opted to freeze them, take them out of the freezer, fill the hole with jam, and bake them directly without thawing.
Upon completion of baking, the cookies will have an irresistible aroma. Carefully remove them from the oven and let them cool slightly on a platter. Once cooled, refill the indentations with quince jelly. For an elegant appearance and even sweeter taste, dust them with powdered sugar or vanilla sugar.
