Veal is washed well under a stream of cold water, as it is essential to remove any impurities and blood. Once drained, it is cut into smaller pieces, about bite-sized, so that it cooks evenly. The potatoes, a staple ingredient, are peeled, washed well, and cut into uniform cubes to cook at the same time.

In a large pot, add the lard or oil, and then put the meat to stew. It is important to add a cup of water to prevent the meat from sticking to the bottom of the pot and to create a moist environment that will help tenderize it. Let it simmer on low heat, stirring occasionally and adding water if it evaporates completely. After a few minutes, when the meat starts to soften, add the chopped onion and sauté together until the onion becomes translucent and aromatic. Let everything simmer on low heat, stirring occasionally, and when the meat is almost done, add the cubed potatoes. This is where the magic of spices comes in: add sweet paprika, bay leaves, and a little more water to cover all the ingredients. This mixture will give a rich and complex flavor to the dish. After a few minutes, when the potatoes have started to boil, add the tomato paste, which will enhance the flavors and give a nice color to the dish. Boil everything together for a few more minutes, then season with salt and pepper to taste.
