Short history
Roasted meat recipes have been an important part of family meals for generations. These dishes have evolved, incorporating local and seasonal ingredients, but have always retained the essence of comfort and the joy of eating together. The poultry roast with vegetables is a perfect example of how we can combine tradition with a healthy lifestyle.
Preparing the marinade
1. Preparing the marinade: Start by peeling the ginger and grating it finely. This step is crucial because fresh ginger will add an intense and spicy flavor to the dish. In a large bowl, mix the grated ginger with the white wine, lemon juice, soy sauce, sliced chili pepper, sliced garlic cloves, and half of the sliced bell pepper. Add salt and pepper to taste.
2. Marinating the meat: Clean the chicken and turkey thighs by removing the skin, then place them in the marinade. Ensure each piece of meat is well coated with the marinade. Cover the bowl with plastic wrap and refrigerate, preferably overnight.
Preparing the vegetables
1. Meanwhile, prepare the vegetables: The next day, peel the carrots and slice them into rounds. Peel and julienne the onion, and peel and slice the zucchinis into rounds. Clean the mushrooms and remove the stems, which you can chop finely to add to the dish.
2. Assemble the vegetables: In a large baking dish, layer the carrot rounds, julienned onion, and half of the green beans. Add the zucchinis and then the marinated meat. Top with the remaining green beans and the other half of the sliced bell pepper.
Baking
1. Preparing the mushrooms: Place the cleaned mushrooms on top of the vegetables and fill each mushroom with a clove of pressed garlic, a bit of chopped fresh parsley, and a small piece of butter. These details will add a perfect flavor.
2. Adding the liquid: Sprinkle salt and pepper on top, then pour the remaining marinade and a cup of meat broth over everything. This liquid will help cook the ingredients evenly and infuse the dish with delicious flavors.
3. Baking: Preheat the oven to 200 degrees Celsius. Place the dish in the oven and let it bake for 1 hour and 30 minutes. Occasionally, take the dish out and spray a little oil and sauce from the dish over the meat to keep it juicy.
Serving
When the meat is browned and a fork easily pierces it, it's a sign that it's ready. Remove the dish from the oven and let it rest for a few minutes before serving. You can serve the roast alongside the mushrooms and roasted vegetables, sprinkled with a little fresh parsley for an appetizing look.
Useful tips
- Marinating: Marinating is essential for achieving tender, flavorful meat. If you don't have time to marinate overnight, let it sit for at least 3 hours.
- Wine alternative: If you prefer a non-alcoholic version, you can replace the white wine with chicken or vegetable broth.
- Varied vegetables: This recipe allows for many variations. You can add potatoes, eggplants, or even pumpkin, depending on your preferences.
- Complementary sauces: A yogurt sauce with garlic and dill makes a perfect accompaniment to this tasty dish.
