The Rich Man's Pie

To prepare a delicious pie with a filling of potatoes, cabbage, and meat, we will follow a few essential steps that will ensure us an exceptional result. We start by combining the ingredients for the dough. In a large bowl, we put 500 g of flour, 100 g of potato flakes, 2-3 sprigs of freshly chopped rosemary, 1 teaspoon of salt, and 100 g of melted butter. We mix these dry ingredients until they are evenly combined.

Meanwhile, in 200 ml of warm milk, we dissolve 25 g of fresh yeast and let it activate for a few minutes. Once the yeast is activated, we add it to the dry ingredients. Using a mixer, we start mixing on low speed, then increase the speed until we obtain an elastic and homogeneous dough that no longer sticks to the sides of the bowl. Then, we wrap the dough in plastic wrap and let it rise in a warm place for about 30 minutes.

In the meantime, we take care of the filling. We peel 500 g of potatoes, cut them into cubes, and boil them in a pot with water and salt. After boiling, we mash them well, add 50 g of melted butter, 2 whole eggs, freshly ground pepper, and, if necessary, a bit of salt. We mix the composition well and set it aside.

For the filling, we sauté 300 g of sauerkraut in 50 ml of oil until it becomes soft and fragrant. In a separate pan, we cut 150 g of bacon into cubes or strips and slice 200 g of sausage. We cook the bacon until it becomes crispy and add the sausages to brown slightly.

After the dough has risen, we roll it out on a floured surface, making sure it is large enough to cover the round shape that we previously greased with butter. We place the dough in the shape, allowing it to exceed the edges. We use some of the dough to decorate the pie.

Now we can assemble the pie. We place a layer of potato puree at the bottom of the shape, followed by the sautéed cabbage, then the bacon and sausages. We continue with another layer of potato puree, cabbage, bacon, and sausages until we finish the ingredients, leaving a final layer of bacon on top.

After we finish filling, we pull the edges of the dough towards the center, leaving an opening in the middle of the pie. We preheat the oven to 180 degrees Celsius and bake the pie for 30 minutes. After this interval, we take the pie out of the oven and pour sour cream into the opening formed. We reintroduce it to the oven for another 15 minutes on low heat, shaking the tray occasionally to allow the sour cream to penetrate well.

We serve the pie hot, offering a surplus of sour cream for those who wish. This recipe is perfect for a family meal or a special occasion, bringing an exceptional taste and an enticing aroma in every slice savored. Enjoy your meal!
