Focaccia with Olives
Flour is mixed with salt and sugar in a large bowl, ensuring that the ingredients are well integrated to achieve an even base. After mixing, add the 5 tablespoons of sunflower oil, which will add both flavor and a pleasant texture to the dough. In another container, dissolve the yeast in warm water, being careful not to make it too hot so as not to destroy the yeast. Once the yeast is completely dissolved, pour the mixture over the flour.
Start kneading the dough with your hands, keeping in mind that it will have a softer and stickier texture. It is important not to add extra flour; instead, if you feel the dough is too sticky, you can add a tablespoon of oil. This will help achieve a fine and elastic consistency. Continue kneading the dough for about 30 minutes, hitting it against the work surface 50 times, a process that will activate the gluten and improve its structure.
After you finish kneading, let the dough rise in a warm place, covered with a damp towel, until its volume doubles. This process can take from 1 to 2 hours, depending on the room temperature. Once the dough has risen, prepare a baking tray. Take a piece of parchment paper, place it in the tray, and grease it with the 2 tablespoons of oil. Then, take the risen dough and arrange it evenly in the tray.
On top of the dough, add another tablespoon of oil and, with your fingertips, gently press the dough to allow the oil to penetrate inside. This step will add an enhanced flavor to your focaccia. If you are using pitted olives, cut them in half and remove the pits, then scatter them evenly over the dough. Now, the focaccia is ready to be baked.
Preheat the oven to 200 degrees Celsius and place the tray in the oven. Bake the focaccia until it turns golden brown, and the enticing aroma spreads throughout the kitchen.
