To prepare a particularly delicious dessert, we need a few simple but essential ingredients. We start with the dough, where we will combine flour, sugar, vanilla sugar, and a pinch of salt in a large bowl. These dry ingredients form the perfect base for a crumbly dough. We continue by adding cold butter, cut into small cubes, which will bring a velvety consistency to our dough. It is important to use cold butter, as it will help achieve a fine texture. With our hands, we begin to knead the ingredients, noticing how the mixture becomes sandy and slightly damp, a sign that the butter is beginning to integrate well into the flour.
Once we reach this stage, we gradually add the milk and continue kneading until we obtain a homogeneous, elastic, and easy-to-handle dough. Once made, we wrap the dough in plastic wrap and let it rest in the refrigerator for about an hour. This step is essential as it allows the gluten to relax, thus facilitating the subsequent rolling out of the dough.
While the dough cools, we take care of the filling. In another bowl, we mix the cream cheese with the sour cream, then add the sugar and vanilla sugar. It is important to mix these ingredients well to obtain a creamy and homogeneous composition. The next step is to add the egg yolks, one at a time, ensuring that each is well incorporated before adding the next. Finally, we sprinkle the flour and mix again until the entire composition becomes uniform and velvety.
In another bowl, we beat the egg whites with a pinch of salt until we obtain a firm foam. This step will add an airy texture to our filling. Using a spatula, we gently begin to incorporate the egg whites into the cheese mixture, being careful not to lose the air from the mixture.
After the dough has cooled, we roll it out on a lightly floured surface, forming a round sheet that we will use to cover a round baking pan with a diameter of 24 cm. The pan should be prepared in advance, lined with parchment paper on the bottom and greased with a little oil on the edges to prevent sticking. Once the dough is placed in the pan, we pour the cheese filling in the center and level it evenly.
Now, it is time to preheat the oven. We bake the cake at high heat for 30 minutes, then reduce the temperature and let it bake for another 20 minutes at low heat, until the surface becomes golden and appetizing. Once baked, we let the cake cool in the oven with the door slightly open to prevent cracking.
