Mushroom Cake
To prepare a delicious mushroom recipe, we will start by carefully cleaning and washing the mushrooms. They should be finely chopped so that they integrate perfectly into our mixture. In a heated pan, we add a little olive oil and sauté the finely chopped onion until it becomes glassy and fragrant. Then, we grate a fresh carrot, adding it to the pan after the onion has taken on a golden hue. This combination will add sweetness and color to our dish.
After about five minutes of cooking, it's time to add the chopped mushrooms. We let the ingredients sauté together, stirring occasionally, until the mushrooms release their juice and become tender. At the end of cooking, we add the freshly chopped parsley and salt to taste, mixing well to combine the flavors. This is our savory filling, which will give a special taste to the final dish.
In a separate bowl, we will prepare the base mixture. We mix the flour with the baking powder, ensuring there are no lumps, and in another container, we beat the eggs until frothy. We add the sour cream and yogurt, mixing them well until we obtain a homogeneous mixture. The olive oil will be added gradually, making the mixture creamier. Finally, we incorporate the flour mixed with the baking powder, carefully mixing to avoid losing air from the mixture. We add salt to taste, being careful not to overdo it, as the mushroom filling will also contribute to the flavor.
From this mixture, we will take two tablespoons and mix them with the mushroom filling, ensuring all ingredients are well integrated. The rest of the mixture is poured into a loaf pan, which we previously greased with a little oil or butter. In the center of the dough, we add the mushroom filling, creating an attractive contrast between the fluffy dough and the rich filling.
Once everything is prepared, we place the pan in the oven, preheated to 180 degrees Celsius, and let it bake for about 40-50 minutes. It is very important to do the toothpick test to check if the dish is ready. A toothpick inserted in the middle of the loaf should come out clean, without traces of wet dough. Once it has been removed from the oven, let it cool slightly before slicing. This recipe is perfect as an appetizer or as a main dish, bringing a touch of flavor to any meal!
