The vegetables and meat are prepared. The onion is cut into small pieces, and the garlic is minced finely to release its intense aroma. The carrots are washed, peeled, and cut into rounds or cubes, depending on preference. The bell pepper is cleaned of seeds and cut into strips or small cubes, adding a touch of color and sweetness to the dish. If included in the recipe, the eggplants are cut into cubes and left to drain with salt for a while to remove bitterness.

The meat, whether chicken, pork, or beef, is cut into medium-sized pieces that will cook evenly. In a large pan, a little olive oil is added and heated over medium heat. When the oil reaches the right temperature, the meat is added and sautéed until golden brown on all sides. This will add a tender texture and savory flavor to the dish. Once the meat is browned, it is removed from the pan and set aside.

In the same pan, the onion and garlic are added, allowing them to sauté until translucent and release their aromas. Then, the carrots and bell pepper are added, stirring constantly. The vegetables are sautéed for a few minutes until they start to soften. This is an important step, as the vegetables will add extra flavor and texture to the dish.

After the vegetables have softened, the meat is added back into the pan along with preferred spices – salt, pepper, sweet or hot paprika, to taste. A bay leaf or a few sprigs of thyme can also be added for extra flavor. A little water or chicken broth is poured in, enough to cover the ingredients, and it is left to simmer on low heat, covered, for about 30-40 minutes.

In the last 10 minutes of cooking, other vegetables, such as zucchini or potatoes, cut into suitable pieces can be added. These will contribute to a rich and hearty dish. It is important that everything simmers on low heat to allow the flavors to develop and blend harmoniously. Once the meat is tender and the vegetables are cooked, the dish is ready. It can be served hot, with a side of rice or fresh bread, to complete the culinary experience.

 Ingredients: 450 g pork, 4-5 tablespoons sesame oil, 5-6 tablespoons soy sauce, 150 ml canned coconut milk, 1 handful of peas, 5-6 broccoli florets, 1 red bell pepper, 1 onion, 2-3 garlic cloves, 2 carrots, salt, 1 teaspoon mango chutney (optional), garam masala (optional), wok noodles
