I have made this mayonnaise dozens of times when I quickly needed a good sauce for salad or something to put in a sandwich. Ingredients

1 raw yolk
1 teaspoon mustard
4-5 tablespoons oil (I use quality oil for better taste)

Preparation method

1. Place the raw yolk in a small bowl.
2. Add the mustard and a good pinch of salt.
3. Start mixing with a wooden spoon, making sure to always maintain the same direction to prevent the mayonnaise from curdling.
4. Slowly drizzle the oil, starting with just a few drops at a time, and mix well after each addition. Do not add new oil until the previous one is fully incorporated.
5. As the mayonnaise thickens and gains consistency, I can add the oil in a thin stream, not just drop by drop.
6. If I see that the mayonnaise shows signs of curdling, I add an extra teaspoon of mustard and mix quickly.
7. After achieving the desired texture, I taste and add more salt if needed. Finally, I add lemon juice, but only if I want it a bit tangy.
