Seafood Paella
Paella is an emblematic dish of Spanish cuisine, especially from the Valencia region, where it was first created. This seafood paella recipe is an excellent choice for a meal full of flavor and color. I will provide you with detailed steps to prepare this delicacy.
We start with the necessary ingredients: 400g of rice (preferably Bomba rice or other paella rice), 300g of sliced squid, 200g of large shrimp, 250g of oysters, 1 red bell pepper cut into julienne, 1 ripe tomato finely chopped, 2 cloves of crushed garlic, 100ml of olive oil, 200g of green beans (or other green beans), 1 liter of fish broth, salt, pepper, a pinch of coloring for rice (or saffron), and fresh parsley for decoration.
The first step is to prepare the special paella pan. Heat the olive oil over medium heat. Add the red bell pepper and sauté for a few minutes until it becomes soft and releases its aroma. Then, add the sliced squid and shrimp, continuing to sauté the ingredients for 3-4 minutes until the squid becomes slightly opaque. It is important not to cook them too much, as they can become rubbery.
After the seafood is ready, remove it to a plate and keep it warm. In the same pan, add the chopped tomato and crushed garlic, stirring quickly to avoid burning the garlic. After a minute, add the rice and coloring, mixing well to coat it with the flavored oil.
Once the rice has absorbed the flavors, pour in the hot fish broth, ensuring that the entire mixture is evenly distributed in the pan. Finally, place the shrimp, oysters, and, if reserved, the sautéed bell pepper on top. Let everything simmer over medium heat without stirring, to form the characteristic crust on the bottom of the pan.
When the liquid has evaporated and the rice is cooked but slightly al dente, remove the pan from the heat. Cover it with aluminum foil or a towel to let the paella rest for 5-10 minutes. This step will allow the flavors to intensify and the rice to absorb the last drops of liquid.
To serve, garnish with fresh parsley and offer lemon wedges on the side. You can accompany the seafood paella with an alioli sauce, which will add a creamy and flavorful note.
