Bird's milk
Bird's milk – a classic and delicate dessert that takes us back to childhood, filled with pleasant memories and moments of flavor. This simple and quick recipe will transform ordinary ingredients into something truly special, and the fine texture of this dessert will delight any gourmet. I invite you to discover how to prepare this delicious bird's milk step by step.
Preparation time: 15 minutes
Cooking time: 10 minutes
Total time: 25 minutes
Number of servings: 4
Necessary ingredients:
- 2 fresh eggs
- 1 packet of vanilla sugar
- 4 tablespoons of sugar
- 600 ml of milk (it is ideal to use whole milk for a creamier texture)
Step 1: Preparing the ingredients
Start by carefully separating the egg whites from the yolks. This is an essential step, so make sure no traces of yolk remain in the whites, as they will not whip well. Use a clean, dry bowl for the egg whites to achieve a perfect foam.
Step 2: Heating the milk
In a large pot, add the 600 ml of milk and place it over medium heat. It is crucial that the milk is warm but not boiling, as boiling will affect the final texture of the dessert. Meanwhile, continue with the next steps.
Step 3: Preparing the yolks
In another bowl, beat the yolks with a packet of vanilla sugar and the 4 tablespoons of sugar using a whisk or mixer. The mixture should become creamy and take on a lighter shade.
Step 4: Tempering the yolks
When the milk is warm, take a spoonful of milk and gradually add it to the yolk mixture, stirring continuously. This process is called tempering and is essential to prevent the yolks from coagulating. After incorporating enough milk, pour the mixture into the pot with milk, placing it back on low heat. Be careful not to let it reach boiling point, just keep it warm.
Step 5: Whipping the egg whites
In a clean bowl, beat the egg whites with 2 tablespoons of sugar until you obtain a firm and glossy foam. It is recommended to use an electric mixer to make your work easier, but you can also do this manually with a whisk if you prefer a more traditional experience.
Step 6: Forming the egg white dumplings
Use a spoon to take portions of the egg white foam and carefully add them to the warm milk. Let them cook for 2 minutes on one side, then turn them with a spatula and let them cook for another 2 minutes. These mini dumplings will become fluffy and light, perfectly suited to integrate into the milk mixture.
Step 7: Serving
Once the dumplings are ready, take the pot off the heat and let the dessert cool slightly. Personally, I prefer to serve bird's milk cold, so I recommend letting it cool to room temperature and then placing it in the fridge for a few hours. This dessert is excellent served with a drizzle of caramel sauce or a dollop of whipped cream for an extra flavor boost.
Personalized version
If you want to add a touch of originality, try infusing the milk with a few cinnamon sticks or a small piece of lemon peel during heating. These flavors will enrich the dessert and give it an additional dimension.
Enjoy this quick and simple dessert that will pamper your senses with every bite!
