Throughout this recipe, I will guide you step by step, providing useful tips and interesting information about the ingredients and cooking techniques.

Preparation time: 1 hour
Baking time: 1 hour
Total time: 2 hours
Number of servings: 6-8

Ingredients

- 1 pike (approx. 1.5 kg)
- 200 g bread (preferably a day old)
- 200 ml milk
- 1 bunch of green onions
- 1 bunch of parsley
- 1 medium carrot
- 50 g fresh ginger
- 3 cloves of garlic
- 3 eggs
- 1/2 teaspoon black peppercorns
- 1/2 teaspoon white peppercorns
- 1/4 teaspoon coriander seeds
- 1-2 allspice berries
- Salt, to taste
- 2-3 tablespoons of oil
- 1 cup of water

Preparing the Pike

1. Cleaning the Pike:
Start by cleaning the pike of scales. Use a sharp knife and wash the fish well with cold water. Gently cut the skin around the head, being careful not to cut it completely. Continue by cutting the spine so that the head remains attached to the skin.

2. Peeling the Skin:
Now comes the more complicated part. Using your fingers or, if you feel confident, a knife, detach the skin from the flesh, being careful not to tear it. This will become the pouch in which we will fill the stuffing.

3. Eviscerating:
Eviscerate the fish, removing all the entrails. Wash the inside well and, with a sharp knife, cut all the meat off the bones, keeping away from the skin.

Preparing the Stuffing

4. Preparing the Bread:
Cut the bread into slices and soak it in milk. This step is essential for achieving a soft and flavorful stuffing.

5. Preparing the Vegetables:
Clean and wash the carrot, garlic, ginger, green onions, and parsley. All these ingredients will contribute to a vibrant flavor.

6. Chopping the Ingredients:
Use a food processor or meat grinder to chop together the meat, carrot, garlic, ginger, greens, and squeezed bread. This mixture will form the base of the stuffing, full of flavor.

7. Seasoning:
In a mortar, crush the peppercorns, coriander, and allspice. Add these spices to the meat mixture along with the 3 eggs, 2-3 tablespoons of oil, and water. Mix well until homogeneous.

Stuffing the Pike

8. Filling:
Using a spoon or your hands, fill the pike with the meat mixture. Make sure to pack the stuffing towards the tail to prevent air bubbles from forming. If there is leftover stuffing, you can make meatballs from it.

Baking the Pike

9. Preparing for the Oven:
Place the pike in a large baking dish, belly down. Position the head close to the body to keep the stuffing inside.

10. Baking:
Add a cup of water and 2-3 tablespoons of oil to the dish. Cover the dish with aluminum foil and place it in the preheated oven at 180°C for 30 minutes.

11. Finishing:
After 30 minutes, remove the foil and baste the pike with the sauce from the dish every 10 minutes. Continue baking for nearly an hour, until the fish is beautifully browned.

Serving

12. Cooling and Serving:
The pike is served cold, sliced, and garnished with lemon slices. This dish is perfect to be served alongside a fresh salad or a side of grilled vegetables.

Practical Tips

- Choosing the Fish: Make sure to choose a fresh pike. Check the eyes, which should be clear and bright, and the smell, which should be fresh, not fishy.

- Variations: You can experiment with the stuffing by adding various herbs or vegetables, such as bell peppers or even olives, for a more intense flavor.

- Leftover Meatballs: The meatballs made from the stuffing can be fried or baked alongside the pike, providing a delicious option for a snack or a separate meal.

Nutritional Benefits

Pike is an excellent source of protein, omega-3, and essential vitamins. This dish is not only tasty but also healthy, making it a perfect choice for those looking to include fish in their diet.
