The Roof Cake is a true culinary gem, perfect for those moments when you want to impress family or friends. This classic recipe combines delicate layers, a fine vanilla cream, and cocoa sticks, creating a dessert with delicious layers. The origins of this cake are lost in history, but every housewife has her own version, and today I will share my favorite recipe with you.

Ingredients:

*Layers:*
- 250 g sugar
- 50 g lard
- 600 g flour
- 3 tablespoons honey
- 5 tablespoons milk
- 2 eggs
- 1 teaspoon baking soda

*Cream:*
- 1 liter milk
- 4 vanilla puddings
- 250 g sugar
- 1 package of butter (at room temperature)

*For cocoa sticks:*
- 2 large tablespoons of cocoa

*For glaze:*
- 200 g chocolate (dark or milk, depending on preference)
- 50 g coconut (for decoration)

Step-by-Step Instructions:

1. Preparing the Layers:
Start by preparing the dough for the layers. In a large bowl, combine the sugar with the lard and mix well until you get a homogeneous composition. Add the eggs, honey, and milk, mixing carefully to integrate all the ingredients.

When the mixture is homogeneous, start incorporating the flour gradually until the dough becomes pliable. Add the baking soda. Don’t forget to use a spatula or your hands to knead the dough – it should be elastic and slightly sticky, but not excessively.

Divide the dough into two equal parts. From the first part, roll out two layers on the back of a baking tray lined with parchment paper. Using a knife, cut each layer into three parts lengthwise. Bake them at a moderate temperature (about 180°C) for 15-20 minutes, or until they turn golden.

2. Preparing the Cocoa Sticks:
To create the cocoa sticks, take the other half of the dough and incorporate the two tablespoons of cocoa. Mix well until the cocoa is fully integrated. Form 12 long sticks and bake them on the back of the tray at the same temperature for 15-20 minutes. Let them cool.

3. Preparing the Vanilla Cream:
In a saucepan, add 1 liter of milk and sugar. Place it over medium heat and add the four packages of pudding. Stir constantly to avoid lumps. Once the pudding has thickened, let it cool completely. Once cooled, incorporate the butter at room temperature and mix until you obtain a smooth and homogeneous cream.

4. Assembling the Cake:
Place a strip of one layer on a platter. Spread a generous layer of vanilla cream, then place three cocoa sticks on top. Continue to layer cream and sticks, alternating layers until you finish the ingredients. Finally, place the other two narrower layers on top, forming a roof.

5. Glazing:
For the glaze, melt the chocolate in a double boiler or in the microwave, being careful not to burn it. Pour the melted chocolate over the cake and sprinkle coconut on top for an attractive look and a crunchy taste.

6. Cooling and Serving:
Allow the cake to cool at room temperature for about 3 hours, so the layers soften and the flavors meld. Serve the Roof Cake cut into portions, alongside a cup of tea or coffee for a perfect dessert.

Practical Tips:
- Ensure all ingredients are at room temperature for a uniform composition.
- You can replace cocoa with carob powder for a healthier version.
- Add a few drops of vanilla essence to the cream for an even more intense flavor.
- This cake pairs wonderfully with a caramel sauce or fruit puree, bringing a delicious contrast of textures and flavors.
