The nettles are selected (leaf by leaf), washed in several cold waters, and boiled in a pot of boiling water. When the nettles are cooked, they are removed from the water and left to cool. It is essential to choose the youngest leaves, as they are the most tender and full of nutrients. Nettles are rich in vitamins, minerals, and antioxidants, making them a particularly healthy ingredient.

After cooling, the nettles are finely chopped, and at this point, you can start preparing the rest of the ingredients for the recipe. In a large skillet, add a tablespoon of olive oil and heat it over medium heat. In the warm oil, sauté a large finely chopped onion until it becomes golden. The aroma of the fried onion will blend perfectly with the slightly tangy taste of the nettles.

Once the onion is sautéed, add the chopped nettles and mix well, allowing them to combine with the onion. You can also add a crushed garlic clove to intensify the flavors. Let the mixture simmer on low heat for a few minutes so that the nettles release their juices. Add salt and pepper to taste, and if you desire a note of freshness, you can include a little lemon juice.

In another bowl, beat 3 eggs with 100 grams of sour cream and a pinch of salt. This mixture will add creaminess to your dish. When the nettle mixture is ready, pour it into the bowl with the eggs and sour cream and mix well until homogeneous.

Preheat the oven to 180 degrees Celsius and prepare a baking tray lined with parchment paper. Pour the mixture into the tray and level the surface. You can add a few thin slices of telemea cheese or goat cheese on top for extra flavor. Bake the dish for about 30-35 minutes or until the surface is golden and slightly crispy.

After it has cooled slightly, cut the frittata into portions and serve it warm or at room temperature, alongside a seasonal salad. This nettle frittata recipe is not only delicious but also packed with nutrients, making it perfect for a healthy lunch or a light dinner. Enjoy every bite and savor the fresh taste of nettles!
