To make the dough: Start by melting the margarine in a large bowl, adding cold water, salt and vinegar to intensify the flavors. Mix the liquid ingredients well, making sure the margarine is evenly incorporated. Then gradually begin to add the flour, stirring constantly with a spatula or your hands, until you have a fairly stiff but elastic dough. It is important to pay attention to the consistency of the dough, as this will influence the final texture of the mixture. Once we have the dough we knead it for about 30 minutes until it is smooth and homogeneous. We then wrap it in cling film and leave it in the fridge to chill and harden while we work on the drob mixture.

Preparation: Fresh nettles are the star ingredient in this dish. Wash them well under cold running water to remove impurities, then boil them in salted water. When the nettles are cooked, remove them and leave to cool slightly, then chop finely. In parallel, boil the soy granules for about 30 minutes, then drain well to remove excess water. In a frying pan, sauté the finely chopped onion in hot oil and add the mushrooms cut into quarters. Let the onion and mushrooms cook until translucent and release their flavors. Add the finely chopped lemon, allowing to soften, then stir in the chopped nettles, mixing well. After a few minutes of cooking, turn off the heat and add the chopped parsley and dill, along with the drained soy.

Boil the peeled potatoes whole in salted water until soft. Once boiled, mash them as for mashed potatoes, adding the vegetable mixture from the pan. Homogenize the mixture well, then season to taste with salt, pepper, vegeta and drob seasoning. This is where it's time to let our imaginations run wild, as we can adjust the seasonings to our preferences.

Roll out the cold dough with a rolling pin on a floured surface, then cut out squares of about 12 cm. In each square, put a portion of the drob mixture and bring the corners together to form an envelope. Place the packets on a baking tray lined with baking paper, making sure they are as close together as possible so that they don't fall apart during baking. Place the tray in the preheated oven at medium temperature and let them brown nicely until golden and appetizing. After baking, let them cool slightly before serving. This dough wrapped drob will bring a burst of flavors and textures to your table and is ideal for any occasion!
