- 600 g veal breast (or chicken breast)
- 200 g veal meat (optional)

- 500 g tomatoes (oaked and peeled, then diced or grated)
- 1 bell pepper
- 1.5 - 2 kg fresh spinach
- Salt and pepper to taste

Preparation steps:
1. Preparing the meat: Start by washing the veal thoroughly under cold running water. Then, shake it with a paper towel to remove excess water. Cut the meat into suitable cuts.
2. Boil the meat: In a large pot, add the meat, quartered onion, carrot and celery. Fill the pot with cold water and bring to a boil. Once boiling, reduce heat to medium and simmer for about 45 minutes. If using a pressure cooker, cooking time will be significantly reduced.
3. Wash the spinach: In the meantime, wash the spinach in several different waters to remove any impurities. It's important to make sure the spinach is clean as it is a main ingredient.
4. Making the sauce: In a separate pan, add the diced bell pepper and minced garlic. Cook for a few minutes, then add the spinach. If necessary, you can add a tablespoon of boiling water to help cook the spinach.
5. Combination of ingredients: Once the spinach has softened, add the diced or pureed tomatoes and tomato juice/tomato paste. Mix well and simmer for 5-7 minutes, until the sauce thickens.
6. Adding the meat: Once the meat has cooked, remove it from the pot and mash the cooked vegetables (onion, carrot and celery). Add the vegetable puree over the spinach and tomato sauce, along with the boiled meat. Season with salt and pepper to taste.
7. Baking: Transfer the mixture to a yena dish. Place the dish in the preheated oven at 180°C and brown for about 15-20 minutes.
8. Adding the eggs: Once the mixture has browned, carefully crack the eggs over the top of the mixture. Put back in the oven for 5-7 minutes, until the eggs are cooked but the yolks remain slightly soft.
9. Serving: Once the dish is ready, remove from the oven and allow to cool slightly. Serve warm, drizzled with lemon juice for a fresh and vibrant taste.
