Chicken stew with mushrooms
To prepare a delicious chicken thigh stew, we start by carefully cleaning and washing the thighs. We cut them in half to help with even and quick cooking. We place the thighs in a large pot with cold water and bring it to a boil. It is important to remove the foam that forms on the surface, as it can give a less pleasant texture to the sauce.
While the thighs are boiling, we take care of the vegetables. We clean and wash an onion, a carrot, and a bell pepper. We cut the onion in half to release its aroma into the soup, while the carrot and pepper can be cut into large pieces or cubes, depending on your preference. When the thighs are half-cooked, we add the vegetables to the pot and let everything boil until the meat is almost done. After boiling, we remove the thighs and strain the broth, which we will use later in the recipe.
Now we turn our attention to the pot. We pour oil into the pot and let it heat up. Then, we add the chicken thighs, which we will lightly brown until they become golden and appetizing. We remove the thighs and, in the remaining oil, add the sliced onion and garlic. When the onion becomes transparent and starts to soften, we add the mushrooms, which should be cleaned, washed, and sliced. We let everything sauté for 5-10 minutes until the mushrooms release their juice.
After the mushrooms are cooked, we add the strained broth to the pot, enough to cover the ingredients. We place the thighs on top of the mushrooms and put the pot in the preheated oven at 180 degrees Celsius. We let it simmer until the liquid reduces by half and the thighs become tender and juicy.
Finally, we add the tomato juice, season with paprika, salt, and pepper to taste, and return the pot to the oven for another 5-10 minutes so that the flavors meld together. At the end, we sprinkle fresh chopped dill on top, which will add a touch of freshness.
This chicken thigh stew is perfect to be served alongside a side of rice or mashed potatoes, turning a simple meal into a true delicacy. Enjoy every bite!
