Oven-Roasted Vegetables
Start by choosing your favorite vegetables for this recipe. An excellent combination would be carrots, zucchini, bell peppers, eggplants, and potatoes, but you can experiment with any vegetables you have on hand. Once you have gathered the ingredients, wash them well under a stream of cold water, making sure to remove any impurities or pesticides. After washing, wipe each vegetable with a clean towel to remove excess water. It is important for the vegetables to be dry to brown nicely during baking.
Onion, an essential ingredient, should be peeled and cut into suitable pieces. This will add a savory flavor to the final dish. Garlic, with its unmistakable aroma, should also be peeled and lightly crushed with the blade of a knife to release the essential oils that will enrich the food. It is added whole to the bowl with vegetables, providing an intense and aromatic flavor.
In the bowl with the chopped vegetables, add salt, pepper, and 3-4 tablespoons of olive oil. Gently mix with your hands, being careful not to crush the vegetables but to toss them so that they are evenly coated with oil, salt, and pepper. This will ensure even baking and a delicious taste.
Meanwhile, preheat the oven to 425°F (218°C) to achieve an optimal temperature for browning the vegetables. Choose a baking tray and line it with aluminum foil, greasing it well with olive oil to prevent the vegetables from sticking. Pour the vegetables into the tray, being careful not to overlap them so they bake evenly.
After 20 minutes of baking, open the oven and gently turn the vegetables with a spatula or spoon. This step is essential to ensure even browning on all sides. If you prefer the vegetables more browned, in the last 5 minutes, increase the oven temperature to 450°F (232°C). This will intensify caramelization, providing a special flavor and texture.
These roasted vegetables are delicious as a side dish with grilled meat, but they can also be served as an appetizer or on a platter alongside dips. Enjoy every bite and savor the fresh and aromatic taste of the vegetables. Bon appétit!
