Baked Wolf Fish with Lemon

Ingredients: 2 sea wolves (lat. Dicentrarchus labrax) a bunch of parsley garlic (one clove or more depending on your taste) oil, salt, juice from a lemon

To prepare a delicious baked fish recipe, start by cleaning the fish of guts and scales, ensuring it is well washed. After cleaning it, carefully dry it using kitchen paper to remove excess water, which will help achieve a crispier crust during baking.

In a bowl, finely chop the fresh parsley along with the garlic. This combination will add a special flavor to the fish. Fill the fish cavities with half of the parsley and garlic mixture, leaving the rest to place on top of the fish before putting it in the oven.

Place the fish in a baking tray where you have previously poured a little oil, so they do not stick and bake evenly. To add a fresh and tangy taste, drizzle the fish and around them with lemon juice, and then sprinkle salt to taste. Cover the tray with aluminum foil or baking paper to retain moisture and allow the fish to cook evenly.

Insert the tray into the preheated oven at a temperature of 200-225 °C, leaving the fish to bake for 20 minutes. After this time, remove the foil or baking paper and check if the fish is ready. A practical method to determine if the fish is cooked is by observing its eyes, which turn white.

For serving, you have the option to cut off the heads and tail of the fish if you haven’t done so earlier. Carefully open the fish lengthwise along the backbone. Use a knife to carefully remove the skin, ensuring the fillets remain intact. Remove the backbone and any other bones or fins from the back of the fish, making sure each portion is clean and easy to consume.

Use a spatula to lift the first fish fillet, leaving the skin in the tray, and arrange it on a platter. This recipe will not only delight your taste buds but will also be a true visual feast on your table. Enjoy this special dish that combines the natural flavors of the fish with fresh parsley and garlic, alongside a glass of white wine for an unforgettable culinary experience.
