Chicken Livers with Black Grapes
To prepare a delicious recipe of chicken livers with grapes and garlic, we start by preparing all the necessary ingredients. We will need 500 grams of fresh chicken livers, 200 grams of grapes (preferably white or red, depending on personal preferences), 2-3 cloves of garlic, 1-2 tablespoons of good quality olive oil, salt and pepper to taste, and for the side dish, rice or mashed potatoes.
The first step is to clean the livers, removing any membranes or fats that are not necessary. We rinse the livers under a stream of cold water and let them drain well. While the livers are draining, we take care of the grapes; we wash them carefully and cut them in half, removing the seeds if necessary.
In a large pan, we heat the olive oil over medium heat. We add the crushed garlic cloves and let them sauté lightly until golden and fragrant. It is important not to let the garlic burn, as it becomes bitter. After the garlic has released its aroma, we add the halved grapes, gently stirring to coat them with the flavored oil. We let the grapes cook for 5-10 minutes until they become slightly soft but still retain their texture.
Now it’s time to add the livers to the pan. We place them in a single layer, ensuring they have enough space to cook evenly. We let the livers fry for about 3-4 minutes on one side until a nice crust forms. When we see that they are browned, we carefully turn them over to the other side and continue cooking for another 2-3 minutes. It is essential not to leave them on the heat too long, as the livers can toughen quickly, so we must ensure they remain slightly pink inside.
Once the livers are ready, we season with salt and pepper to taste. We gently mix to distribute the seasonings. We serve the livers warm, along with the chosen side dish, whether it is fluffy rice, creamy risotto, or fine mashed potatoes.
