Ingredients:

For the dough:
- 150 g soft margarine
- 100 g sugar
- 2 eggs
- 2 packets of vanilla sugar
- A pinch of salt
- Approximately 600 g flour
- 150 ml lukewarm milk
- 25 g fresh yeast

For the filling:
- Approximately 1 kg sweet cottage cheese (drained)
- 4-5 eggs
- 3-4 tablespoons of semolina
- 8 tablespoons of sugar (to taste)
- 5 tablespoons of sour cream
- Grated zest of one lemon
- 3-4 packets of vanilla sugar
- 125 g raisins
- 4 tablespoons of rum
- 1 beaten egg with a little sugar for brushing the pie

Preparing the dough:

1. Start by preparing the yeast: in a small bowl, add the fresh yeast along with a tablespoon of sugar and lukewarm milk. Sprinkle a little flour on top and let the mixture rise for about 30 minutes until a foam forms.

2. In a larger bowl, sift 600 g of flour. Add the soft margarine, sugar, a pinch of salt, and mix well. Once the yeast has risen, gradually pour it into the bowl with flour and start kneading the dough. It should be soft, non-sticky, and easy to shape. If necessary, you can add a little warm milk or more flour.

3. After achieving a homogeneous dough, cover it with a towel and place it in a warm place to rise for about 60 minutes. The dough should double in volume.

Preparing the filling:

1. While the dough is rising, prepare the filling: soak the raisins in rum for 10-15 minutes to hydrate and gain flavor.

2. If the cheese is not drained, place the sweet cottage cheese in a sieve to remove excess water. Grate the cheese on a large grater and mix it with sour cream, sugar, semolina, eggs, vanilla sugar, and lemon zest. Add the drained raisins and mix well.

Assembling the pie:

1. After the dough has risen, divide it into two equal parts. On a floured work surface, roll each part into a thicker sheet.

2. Preheat the oven to 180 degrees Celsius. Place one sheet of dough in a baking tray lined with parchment paper. Prick the dough with a fork here and there to prevent puffing.

3. Pour the cheese filling evenly over the first sheet of dough. Place the other sheet on top, prick again with a fork, and brush the pie with the beaten egg mixed with a bit of sugar.

4. Bake the pie in the oven for 30-40 minutes or until it becomes golden and browned. Finally, take the pie out of the oven and let it cool slightly. You can dust it with powdered sugar before serving.
