Spicy Spaghetti with Eggplant
To savor these delicious pasta with spicy eggplant sauce, we will start by preparing the freshly picked vegetables from the garden. The first step is to dice all the necessary ingredients. We will take an eggplant, slice it lengthwise, then season it with salt, pepper, and a little olive oil before placing it on the grill. The grill will give it a special flavor, and the slices of eggplant will contribute to the final decoration of our dish.
In a large pan, we put 2-3 tablespoons of olive oil and start sautéing the finely chopped onion. We let it cook until it becomes translucent and starts to release its aroma. After that, we add the chopped vegetables: the eggplant cubes, the hot pepper, and the bell pepper. We continue to sauté the vegetables until they soften slightly, being careful to stir occasionally so they don't stick to the pan.
Once the vegetables have started to soften, we add the blended tomatoes, which will give a fresh and rich taste to our sauce. We will also add the packet of Maggi Idea of the Day Penne Arrabbiata, dissolved in 150 ml of warm water, to intensify the flavors. We let everything simmer on low heat for about 10 minutes, so the vegetables perfectly combine with the tomato sauce.
Meanwhile, separately, in a large pot, we bring water to a boil for the spaghetti. When the water starts to boil, we add the Barilla pasta, following the instructions on the box to achieve the perfect texture. It is important not to forget to add salt to the water, to give flavor to the pasta.
Once the pasta is cooked, we drain it and add it to the pan with the spicy eggplant sauce. We carefully mix everything so that each strand of pasta is evenly coated with the flavorful sauce. It is time to enjoy the colors and aromas, and for a final decoration, we can add the grilled eggplant slices, which will not only bring a pleasant appearance but also a slightly smoky texture to our dish.
