Zucchini Caviar
To prepare a delicious zucchini cream, we start by preparing the necessary ingredients. The first step is to wash the zucchinis well, then cut them into uniform-sized cubes, which will ensure even cooking. We place them in a steaming container, along with a clove of garlic, which will add a subtle and savory flavor to our dish. If you prefer a less intense garlic flavor, you can choose to remove the clove at the end or, on the contrary, add it to the blending to intensify the taste.
After the zucchinis are steamed, we transfer them to a strainer and let them drain, thus eliminating the excess liquid that could affect the consistency of the cream. This is an important step, as we want a smooth and creamy cream. Next, we add the drained zucchinis to a blender or food processor. Here, we can also add a boiled potato, which is optional, but will thicken the cream and give it a richer texture.
Now it's time to add the spices: salt, pepper, and, if you like, olive oil. The oil should be poured gradually, as if making mayonnaise, to achieve a fine emulsion. Additionally, we add cumin, which will provide a special taste and a fragrant note to our dish. We blend all the ingredients well until we obtain a homogeneous and velvety composition.
Once the cream is ready, we transfer it to a bowl and let it chill in the refrigerator for a few hours, so that the flavors can blend and become more intense. It can be served on a slice of bread, which can be fresh or, for an extra crunch, previously toasted. This zucchini cream will be a perfect appetizer for any occasion, bringing a touch of freshness and flavor to your meal.
