Ingredients

For Layer 1:
- 500 g flour
- 1 egg
- 5 tablespoons warm milk
- 1 teaspoon ammonia quenched with lemon juice
- 2 tablespoons cocoa
- 1 package of butter or margarine (approximately 250 g)

For Layer 2:
- 4 eggs
- 5 tablespoons water
- 8 tablespoons sugar
- 8 tablespoons flour
- 1 packet of vanilla sugar

For the Cream:
- 300 g sugar
- 300 ml milk
- 2 tablespoons flour
- Grated zest of one lemon
- Vanilla
- 1 package of butter (approximately 250 g)

Making Layer 1

1. Preparing the dough: In a large bowl, mix the flour, egg, warm milk, quenched ammonia with lemon juice, cocoa, and diced butter. Knead well until you obtain a homogeneous dough. Feel free to add a little more flour if the dough is too sticky.

2. Dividing the mixture: Divide the dough into two equal portions. Now is the time to shape it. Use a rolling pin to roll out each portion into a thin sheet.

3. Baking the sheets: Preheat the oven to 180 degrees Celsius. Grease the back of a tray with butter and sprinkle flour to prevent sticking. Place the first sheet on the back of the tray and bake for 10-15 minutes, or until the sheet is lightly browned. Repeat the process with the second sheet.

Making Layer 2

4. Beating the egg whites: In a clean bowl, beat the egg whites until foamy. Gradually add the 5 tablespoons of water and continue beating until you achieve a firm foam.

5. Adding sugar and flour: Gradually add the 8 tablespoons of sugar and the 8 tablespoons of flour, gently mixing with a spatula to avoid weighing down the mixture. Add the vanilla sugar as well.

6. Baking the layer: Grease the tray again with butter and line it with baking paper. Pour the mixture into the tray and bake for 20-25 minutes, or until the layer passes the toothpick test (when the toothpick comes out clean).

Making the Cream

7. Boiling the ingredients: In a bain-marie, combine the milk, sugar, and the 2 tablespoons of flour. Boil the mixture, stirring constantly, until the cream thickens. It is important to achieve a consistency that leaves a clear line on the bottom of the pan when stirred.

8. Flavoring: Once the cream has thickened, add the lemon juice, butter, and vanilla sugar. If desired, you can also add crushed nuts for extra texture and flavor.

Assembling the Cake

9. The layer of sheets: Place the first cocoa sheet on a platter, generously spread it with the prepared cream. Then, place Layer 2 on top and repeat with another layer of cream. Cover with the last cocoa sheet.

10. Decorating: Dust the cake with cocoa or cover it with a chocolate glaze, as preferred. Let the cake rest in the refrigerator for 24 hours to allow the flavors to combine and achieve a perfect texture.

Serving and Variations

This television cake pairs perfectly with a cup of coffee or fragrant tea. Sharing this cake with friends and family will turn any gathering into a special moment. You can vary the recipe by adding fresh fruits between layers or using different flavors of extracts, such as almond or rum.

Useful Tips

- The sheets: Ensure that the sheets are well-baked to avoid breaking during assembly. Test them with a toothpick before removing them from the oven.
- The cream: If you want an even richer cream, you can add a package of mascarpone cheese to the mixture.
- Storage: The cake can be stored in the refrigerator for up to a week, but it is recommended to consume it within 3-4 days to maintain its freshness.
