Bean Stew
Ingredients: • 500 g green beans • 1 onion • 1 carrot • 500 g ripe tomatoes (I used a 400 g can of diced tomatoes) • 3 tablespoons of oil • salt, pepper • 1 thick bunch of fresh dill (I used 2 tablespoons of dried dill and a bunch of chopped parsley) • 1 glass of sour cream (only if it's time for indulgence) *
To prepare a delicious dish with beans, follow these detailed steps that will transform your simple ingredients into a true culinary feast. Start by boiling the bean pods in water with a little salt. They should boil until tender but not too soft, so they retain their texture. Meanwhile, prepare the vegetables. Chop the onion finely, dice the carrot, and cut the tomatoes into small pieces. These ingredients will add a rich flavor and irresistible aroma to your dish.
In a pan, heat a tablespoon of oil. Add the onion and carrot, sautéing them over medium heat until the onion becomes translucent. Then, add the chopped tomatoes and continue to cook the mixture. It is important to let the vegetables reduce well, so the flavors combine, and the water evaporates, leaving only a delicious sauce. When the beans are cooked, drain them and add them to the pan over the vegetables. Add the oil in which the vegetables were sautéed, mixing well to ensure that all the ingredients blend harmoniously.
After mixing everything, let the dish simmer for a few moments so that the flavors can "make friends." Don’t forget to season with salt and pepper to taste, to highlight all the flavors on the plate. While the food is simmering, you can prepare the sour cream. If you can’t find sour cream like in Romania, you can use a cup of fresh cream to which you add a couple of tablespoons of yogurt. Mix well until it becomes smooth and creamy. This combination will add a tangy flavor and a velvety texture to the dish.
When the food is ready, pour the sour cream with yogurt over the mixture of vegetables and beans and mix gently. Let it come to a final boil, so that the flavors combine perfectly. If you have fresh and younger bean pods, you can also add the cut pods to enrich the dish with a crunchy texture and a fresh note. It is good to know that if the skin of the bean is thick, it is recommended to remove it before boiling. This way, you ensure that the dish will be evenly cooked, and the beans will remain juicy and tasty. This recipe, which combines tradition with simple ingredients, will bring a touch of authenticity to every meal.
