Polenta is a traditional Romanian dish that can be enjoyed in countless ways. Today, I will present you with a recipe for polenta with mushrooms and red beans, which combines textures and flavors in a special way. We start with the necessary ingredients: for the polenta, you will need 3 cups of water and 1 heaping cup of cornmeal. Make sure the cornmeal is of good quality to achieve a tasty polenta. We will use 2 handfuls of mushrooms, preferably champignon or pleurotus mushrooms, but you can experiment with other types depending on your preferences.

To add a touch of sweetness, grate a medium carrot on a fine grater and add it over the mushrooms, along with a pinch of salt to enhance their flavor. If you are not a fan of onions or garlic, the carrot is an excellent choice, but if you wish, you can add sautéed onions and garlic for a more complex taste.

Red beans are essential in this recipe. Use 1/2 can, drained and rinsed under cold water. This will add protein and a pleasant texture to the dish. For an extra flavor boost, you will need a bit of margarine or butter, along with a few tablespoons of tomato pulp, preferably from a thick 'pasta di pomodoro' bottle.

Start by placing a layer of polenta in the Jena dish, followed by a layer of seasoned beans with salt and pepper, and cover everything with the tomato sauce. Continue with another layer of polenta. An interesting idea would be to pour the polenta onto a baking sheet and spread it evenly, like a thicker lasagna sheet; this will enhance the final presentation.

After adding the last layer of polenta, sprinkle pieces of margarine or butter on top and arrange the mushrooms so that they brown nicely in the oven. Place the dish in a preheated oven at medium heat for about 15 minutes. It is important to let the polenta cool for 10 minutes before serving to allow the flavors to blend perfectly.
