- 1/2 cup of cold water
- 1-2 tablespoons of sugar (optional, for a sweeter ketchup)
- 1-2 tablespoons of vinegar (wine or balsamic, for a pleasant acidity)
- Salt to taste
- Optional spices: black pepper, garlic powder, paprika, thyme, or basil

Instructions:

1. Preparing the tomatoes: Wash the tomatoes well and remove the stems. Cut them into large cubes. If you prefer a smoother texture, you can peel the tomatoes, but this step is not mandatory.

2. Cooking the onion: In a large skillet, add the olive oil and sauté the finely chopped onion over medium heat. Add a pinch of salt to help the onion soften. Sauté until it becomes translucent, about 5-7 minutes.

3. Adding the tomatoes: Add the tomato cubes to the skillet and mix well. Continue cooking over medium heat, stirring occasionally, for 10-15 minutes, until the tomatoes soften and release their juice.

4. Making the ketchup: Once the tomatoes have softened, add the cold water and mix. Transfer the mixture to a blender or food processor and blend until you achieve a smooth consistency. If you prefer a chunkier ketchup, you can blend it less.

5. Seasoning: Put the mixture from the blender back into the skillet and add the sugar, vinegar, and desired spices. Taste and adjust the salt and sugar to your preference. Let the ketchup simmer over low heat for 15-20 minutes, stirring occasionally, until it thickens to the desired consistency.

6. Cooling and storing: Once the ketchup has reached the desired consistency, let it cool slightly, then pour it into clean bottles or jars. You can keep the ketchup in the refrigerator for 2-3 weeks.
