- 100 g of tomatoes in tomato sauce
- 2 tablespoons of tomato paste
- oregano, to taste
- basil, to taste
- thyme, to taste
- sweet paprika, to taste
Preparation:
1. Soaking the beans: Start by soaking the beans in cold water the night before. This step is essential as it helps reduce cooking time and improves the digestibility of the beans. Make sure the beans are completely covered with water, as they will absorb some of the liquid.
2. Boiling the beans: The next day, drain the beans and rinse them under cold water. Place the beans in a large pot, add fresh water, and boil over medium heat for about 3 hours, changing the water a few times. This will help eliminate substances that can cause digestive discomfort. When the beans are soft, drain them well.
3. Preparing the bean puree: Use a food processor to turn the boiled beans into a smooth puree. Add the peeled garlic, salt, paprika, and 2 tablespoons of oil. Blend until you achieve a homogeneous mixture. Taste and adjust the salt and spices if necessary.
4. Cooking the tomato sauce: In a large skillet, add 2 tablespoons of oil and sauté the finely chopped onion until translucent. Then, add the tomato paste and the tomatoes in tomato sauce. Mix well and let simmer for a few minutes until the sauce thickens slightly. Add oregano, basil, thyme, and adjust the salt to taste.
5. Assembling the dish: Serve the mashed beans on slices of toasted or baked bread. Top with the warm tomato sauce and garnish with a bit of fresh basil, if available.
