It's grilling season, and that doesn't mean we have to limit ourselves to just meat or meat derivatives. In fact, a portion of grilled vegetables can be just as flavorful and satisfying. This recipe, inspired by Laura Laurentiu, is not only simple but also full of flavors and colors, bringing a touch of health to our table.

To start, prepare the vegetables. Choose your favorite vegetables, such as zucchini, eggplant, bell peppers, mushrooms, and onions. Cut them into slices about one centimeter thick. This shape allows for even cooking and is ideal for using skewers. You can also opt for cutting them lengthwise if you prefer a crunchier texture and want to place them directly on the grill.

Once the vegetables are cut, brush each slice with olive oil, using a silicone brush. This step will not only prevent the vegetables from sticking to the grill but will also add a delicious flavor. Then place them on the skewers, carefully prepared to support them.

Preheat the grill to a medium-high temperature. Once the grill is hot, place the vegetable skewers on the grill, making sure they are well spaced to allow for even cooking. Let the vegetables cook for a few minutes, then turn them over. Use a fork to poke them occasionally to check if they are done. The color should be nice, and the texture should be slightly soft but not overcooked.

In addition to the vegetables, you can prepare a delicious sauce that will perfectly complement this dish. In a small bowl, mix olive oil, lemon juice, finely chopped garlic, salt, pepper, and if you like, herbs such as basil or oregano. This sauce will add a fresh and invigorating note to your vegetables.

Once the vegetables are cooked, remove them from the grill and pour the sauce over them, gently mixing to ensure that each piece is evenly coated. Serve them warm, alongside a fresh salad or as a side dish to a meat-based dish, to provide a contrast of textures and flavors. These grilled vegetables are not only a healthy option but also a great way to bring color and flavor to your meal!
