Vegetarian sauce with vegetables – A simple and delicious recipe

Ingredients:
- 2 tablespoons extra virgin olive oil

- 2 medium carrots, peeled and diced
- 1 bell pepper (red or yellow), diced
- 200 g champignon mushrooms, sliced
- 2 cloves of garlic, minced
- 400 g diced tomatoes (canned or fresh)
- 1 teaspoon dried oregano
- Salt and pepper to taste
- Optional: fresh basil leaves for garnish

Step 1: Heating the oil
In a large skillet, heat the 2 tablespoons of olive oil over medium heat. It’s important to use quality olive oil as its flavor will enhance the taste of the sauce.

Step 2: Sauté the vegetables
Add the chopped onion and carrots to the skillet. Let them sauté for about 5 minutes, stirring occasionally, until the onion becomes translucent and the carrots start to soften. This step is essential to develop a flavorful base for your sauce.

Step 3: Add the remaining vegetables
Once the onion and carrots are sautéed, add the bell pepper and sliced mushrooms. Continue to sauté the mixture for another 5-7 minutes, until the mushrooms release their juice and become slightly golden. These vegetables add a pleasant texture and savory taste to the sauce.

Step 4: Flavor the sauce
Now it’s time to add the minced garlic and mix well. Garlic adds a depth of flavor. After about a minute, add the diced tomatoes and oregano. Mix the ingredients well.

Let the sauce simmer on low heat for 10-15 minutes. This cooking time allows the flavors to meld and the sauce to thicken slightly. Stir occasionally to prevent sticking to the bottom of the skillet.
