Veal liver with rice pilaf
To prepare a delicious and nutritious dish, we start by sautéing the onion in a little oil in a large pan. It is essential to ensure that the oil is well heated so that the onion becomes transparent and releases its flavors. We then add the two peppers, diced, and continue to sauté the ingredients together. The peppers will add a note of sweetness and flavor to the dish.
After mixing well, we add the carrots, which we grate finely. The carrots will add a pleasant texture and vibrant color. We cover the pan with a lid and let the mixture soften for about 15 minutes. At this stage, it is important to monitor the mixture and, if necessary, we can add a little water to prevent the ingredients from sticking to the bottom of the pan.
Once the peppers have softened, we wash the rice and let it soak in water for a few minutes. This step helps remove excess starch and ensures that the rice grains will remain whole after boiling. We add the rice to the pan, mix well, and season to taste. It is time to add water, being careful not to exceed the correct proportions. We cover again with a lid and let it simmer on low heat for about 40 minutes, stirring occasionally. If we notice that the water has evaporated too quickly and the rice is not ready, we can add warm water.
While the rice is boiling, we take care of the liver. We cut it into suitable pieces and rub it with salt to enhance its flavor. In another pan, we put the sautéed onion and add the two tablespoons of paprika. We mix quickly and extinguish with a little water to create a savory base. We add the pieces of liver to the pan, cover with a lid, and let it cook for about 30 minutes, stirring occasionally. If necessary, we can add water to maintain an optimal consistency.
When the liver is well cooked, we add the sour cream and finely chopped parsley, mixing gently to combine all the flavors. Once the rice is cooked and has absorbed all the water, we let it sit under the lid for a few more minutes to puff up nicely.
We serve the liver with sour cream sauce alongside the fragrant rice. This dish is not only delicious but also full of nutrients, making it an excellent choice for a hearty meal. Enjoy your meal!
