Pasta with sausage and zucchini
Ingredients: Ingredients for 2 people: * 150-200 g pasta (tubes, spirals, shells, etc.) * 1-2 fresh sausages * 1 larger zucchini * 2 tablespoons oil * 1 clove of garlic (or a little powder) * 2 tablespoons sour cream * chopped fresh parsley (optional) * pepper (optional) * grated parmesan or cheese (optional)
In a pan, we heat two tablespoons of olive oil, then add the sausages, which we have removed from their casing. It is important to brown them lightly so that they develop a tasty crust, but not to fry them too much in order to keep the meat juicy. After the meat has taken on a golden hue, we remove it from the pan and set it aside. In the remaining oil, the aroma intensifies, so we add the finely chopped garlic. The garlic will release its delicious aroma, and when it starts to brown, we add the diced zucchini. We sauté these ingredients over medium heat so that the zucchini softens slightly, bringing a fresh note to the dish.
After a few minutes, we add a cup of broth, which we can obtain from a bouillon cube, to enhance the flavor. Then, we reintroduce the sausage meat into the pan and incorporate the sour cream, which will turn everything into a creamy and savory sauce. We simmer the mixture for 8-10 minutes, until the sausages are fully cooked and the flavors have blended harmoniously.
Meanwhile, we bring water to a boil in a large pot, adding a tablespoon of salt. When the water is boiling, we add the pasta, following the cooking time indicated on the package to achieve a perfect al dente texture. Once the pasta is ready, we drain it, but keep a few tablespoons of the boiling water, as this will help us bind the sauce.
After draining the pasta, we add it to the pan with the sausage and zucchini sauce. We mix well, ensuring that the pasta is evenly coated with sauce. We add a little water from the pasta cooking water to achieve the desired consistency. We let everything cook over medium heat for a minute, stirring constantly so that the flavors integrate perfectly.
For an extra touch of freshness, we can add chopped parsley and freshly ground pepper, which will give a special final taste to the dish. In the end, the sauce should be creamy but not too dry, so if necessary, we can add more pasta cooking water until we achieve the ideal consistency. We serve the dish warm, savoring each bite full of flavor and delicious aromas!
