Servings: 4-6
Preparation time: 20 minutes
Cooking time: 40 minutes
Total time: 1 hour

Ingredients

For the meatballs:
- 500 g minced meat (preferably a mix of pork and beef for a rich flavor)
- 1 handful of rice (approximately 50 g)
- 2 eggs (preferably from free-range hens for a more authentic taste)
- salt (to taste)
- pepper (to taste)

For the soup:
- 1 large onion, finely chopped
- ½ zucchini, diced
- 1 red bell pepper, diced
- 1 carrot, grated or diced
- 1 tomato, diced
- cauliflower (approximately 200 g), broken into florets
- 500 ml borscht (or to taste, for added acidity)
- 1 handful of rice (approximately 50 g)
- Delikat (or other seasoning, to taste)
- salt (to taste)
- 1 bunch of dill, chopped
- 1 bunch of parsley, chopped

Preparation Instructions

1. Preparing the meatballs:
In a large bowl, mix the minced meat with the rice, eggs, salt, and pepper. Use a spatula or even your hands to achieve a homogeneous paste. The rice will contribute to the texture and help the meatballs stay juicy. Don’t skip this step, as it is essential for fluffy and delicious meatballs.

2. Forming the meatballs:
Wet your hands with a little water to prevent the mixture from sticking. Take a portion of the meat mixture and form balls the size of a golf ball. Place them on a wooden board or a plate, making sure they don’t touch each other.

3. Preparing the vegetables:
Chop the onion, zucchini, bell pepper, and carrot into small cubes. Break the cauliflower into florets and prepare the tomato to be added to the soup. This combination of vegetables not only adds a colorful appearance to the soup but also brings a variety of vitamins and minerals.

4. Boiling the vegetables:
In a large pot, add a little water (approximately 1.5 liters) and a teaspoon of salt. Add the vegetables and let them boil until they become slightly soft, about 10-15 minutes. Add the remaining rice and let everything boil together.

5. Adding the meatballs:
When the water is boiling, add the meatballs one by one, being careful to use a spoon to avoid splashes. Keep the heat low and cover the pot. The meatballs are ready when they rise to the surface, which usually takes between 10 and 15 minutes.

6. Finalizing the soup:
Once the meatballs have floated to the top, add the borscht and season with Delikat, salt, and pepper to taste. Let the soup simmer on low heat for another 5-10 minutes to allow the flavors to meld. Finally, add the chopped dill and parsley, which will provide an extra freshness.

7. Serving:
Serve the soup hot, alongside a slice of fresh bread or warm polenta. You can also add a spoonful of sour cream for added creaminess.

Serving suggestions and variations:
- Instead of pork and beef, you can use chicken for a lighter version.
- Add spices like sweet paprika or herbs for a more intense flavor.
- You can replace the rice with quinoa for a healthier, gluten-free option.

Useful tips:
- Make sure all ingredients are cut evenly so they cook uniformly and look good on the plate.
- If you want a more sour soup, you can add more borscht or even the juice of a lemon.
- If you have leftover meatballs, you can freeze them for a quick meal in the future. They will keep well and will be just as delicious after thawing.

Nutritional information:
This soup is rich in protein due to the meat and rice, while the vegetables provide essential fiber and vitamins. A serving of meatball soup contains approximately 300-350 calories, depending on the ingredients used.

Frequently asked questions:
1. Can I use minced meat from other sources?
Yes, you can use turkey or even plant-based meat for a vegetarian version.

2. What can I do with leftover soup?
The soup can be stored in the refrigerator for 2-3 days or can be frozen to be consumed later.

3. How can I make the soup spicier?
You can add hot peppers or spicy seasonings during preparation.

Meatball soup is more than just a dish; it is a family story, a warm hug in a bowl. I encourage you to prepare it with love and share it with your loved ones. Enjoy your meal!
