Gratinated mussels are a delicious and sophisticated dish, perfect for a special dinner or festive meal. Although you can't provide exact quantities, it's important to ensure you have enough mussels to enjoy this dish. A bag of frozen mussels, about 250 grams, is an excellent choice, but if you have access to fresh mussels, you can opt for them without hesitation, as the taste will be just as savory.

The first step is to clean the mussels of sand, an essential detail to ensure that your dish will be as tasty as possible. After cleaning them, let them drain in a bowl in the refrigerator for two or three hours. This waiting time not only helps to eliminate any impurities but also improves the texture of the mussels.

While the mussels are draining, you can prepare a béchamel sauce, essential for adding creaminess and a rich flavor to your dish. For a thicker béchamel sauce, add a little more flour and milk compared to regular recipes. An interesting trick is to add a crushed garlic clove at the end to keep its intense aroma. Once you achieve the perfect consistency, let the sauce cool slightly.

Once the sauce is ready and the mussels have drained, it's time to assemble the dish. Use a spoon or a teaspoon to place the béchamel sauce on each mussel shell. You may run out of sauce or, conversely, have some left over. The general rule is that for every kilogram of whole mussels, you need about 300 grams of béchamel sauce.

After filling all the mussels, generously sprinkle some cheese for gratin. Opt for a cheese like Emmental, which melts beautifully but doesn’t run out of the shells like mozzarella would. This detail will make a difference in the final appearance of the dish.

Finally, sprinkle some breadcrumbs over all the mussels and place them in the preheated oven at 220ºC, with both heating elements on. Leave the mussels in the oven for about 10 minutes. If you have a salamander, it would be ideal to use it to achieve a golden and crispy crust. If not, open the oven door after the first 5 minutes to allow steam to escape, thus helping to form a perfect crust.

After the baking time is over, take the mussels out of the oven and let them cool slightly before serving. This dish is perfect alongside a fresh green salad and a glass of white wine. Enjoy every bite of this delicious dish, which will surely impress anyone. Bon appétit!
