1. Preparing the ingredients: Make sure the rice is cooked and cold. Rice from the previous day is ideal as it is drier and won't stick. Prepare all the ingredients before you start cooking to have everything at hand.
2. Heating the wok: Place the wok over high heat. When it is hot, add the sesame oil. This will add a rich flavor to the fried rice.
3. Cooking the eggs: Crack the eggs into the wok and stir quickly with a spatula to form a soft omelet, also known as "papara". When the eggs are cooked, remove them from the wok and set aside.
4. Cooking the vegetables: In the same wok, add a little more oil if necessary. Add the mixed vegetables and sliced green onions. Sauté for 2-3 minutes until they are tender but still crisp. If you choose to add meat or tofu, now is the time to incorporate them and cook until lightly browned.
