Chicken stew with sour cream (Tejfolos csirke)
To prepare a delicious main dish of chicken with creamy sauce and dumplings, we start with the essential ingredients. You will need 500 grams of chicken (thighs or breast, according to preference), one medium onion, two peppers (red and green, for a splash of color), 400 grams of tomatoes (either fresh or canned), 50 ml of oil (or a tablespoon of lard), a teaspoon of paprika, salt and pepper to taste, 2-3 tablespoons of flour, and 400 grams of sour cream. Don't forget the ingredients for the dumplings: 200 grams of flour, two eggs, a teaspoon of salt, and water.
The first step is to chop the onion and peppers into small cubes. In a large skillet or pot, add the oil and sauté the onion and peppers over medium heat, stirring constantly, until they become slightly golden and soft. This process will release the flavors of the vegetables, providing a savory base for the dish. Once the vegetables are ready, add the pieces of chicken. Season with salt, pepper, and the diced or thinly sliced tomatoes. Mix well and let the ingredients combine for about 2-3 minutes.
After the meat has browned slightly, add the paprika and enough water to cover the chicken. Cover the skillet and let it simmer on low heat. Check occasionally; if the sauce reduces too much and the meat is not yet fully cooked, add a little water to maintain moisture. When the meat is tender, it's time to prepare the creamy sauce. Mix 2-3 tablespoons of flour with the sour cream and thin it out with a little water, then pour the mixture over the meat. Let it boil for a few moments until the sauce thickens slightly.
Meanwhile, prepare the dumplings. In a bowl, mix the flour with the eggs, salt, and water, kneading well to avoid lumps. The dough should be a bit softer but not so fluid that it runs. Boil a pot of water with salt. When the water is boiling, tear pieces from the dough and form dumplings, adding them to the water. The dumplings are ready when they rise to the surface. Remove them with a spatula, rinse them under running water, and arrange them on plates.
To serve, generously pour the chicken sauce over the dumplings, letting yourself be carried away by the delicious flavors. This dish is perfect for a family dinner or a festive meal. Enjoy your meal!
