Cherry Ice Cream
To create a delicious and refreshing dessert, I started by boiling the sugar together with the eggs. This initial step is essential, as the sugar completely dissolves through heating, and the eggs change their texture, forming a light and fluffy foam. I mixed the ingredients with a whisk or with the mixer on low speed until I obtained a homogeneous and slightly creamy composition. After noticing that I had achieved a consistent foam, I let the mixture cool to avoid the eggs from coagulating.
In the meantime, I took care of the cherries. I chose well-ripened, juicy cherries because they would add an intense and natural flavor to our dessert. I crushed them with the mixer, obtaining a fine puree, but I also left some pieces to maintain the texture. This will provide a pleasant contrast in every bite. The cherry puree is now ready, and its inviting aroma fills the entire kitchen.
In another bowl, I whipped the country cream until it became firm and fluffy. This will add a creamy and rich character to our dessert. I made sure not to whip it too much so that it wouldn't turn into butter. After the cream was whipped, I combined it with the cherry puree and the egg-sugar mixture, gently folding with a spatula to maintain the aeration of the composition.
Once all the ingredients were integrated, I transferred the mixture to a suitable container for the freezer. I let the dessert freeze for about an hour and a half. After this interval, I took it out of the freezer and mixed it again to break down the ice crystals that had formed and to achieve a smooth and creamy texture. This step is crucial to avoid creating a dessert that is too compact or heavy.
The result was a luscious delicacy with an intense cherry flavor, perfect for enjoying on warm summer days. The vibrant color of the cherries harmonizes beautifully with the slightly creamy texture of the cream, creating a delightful visual and taste contrast. This dessert is not only delicious but also very simple to make, bringing a splash of joy and freshness to every bowl.
