To prepare a delicious recipe for breaded eggplant with mozzarella, we will start by peeling the eggplants. Choose fresh, firm eggplants with a uniform color. Cut the eggplants lengthwise into slices about 1 cm thick. These will be easier to cook and will better absorb the flavors. Once sliced, place the slices in a bowl of cold water and add a handful of salt. Let them soak for about an hour. This step is essential to remove the specific bitterness of the eggplants and to prevent their oxidation, which could change their color.

After soaking, remove the eggplants from the water and dry them with a paper towel to remove excess water and salt. Now we are ready to fry them. In a deep skillet, heat enough oil to cover the bottom of the pan. Make sure the oil is hot but not smoking, so the eggplants do not burn. Place the eggplant slices in the pan, being careful not to overlap them, so they brown evenly. Fry them for 3-4 minutes on each side until golden and crispy. Once done, transfer them to a plate lined with paper towels to absorb excess oil.

While the eggplants cool, prepare the mozzarella. Cut the cheese into thin slices, about the same size as the eggplant slices. Now we are ready to assemble the dish. Take one slice of eggplant, add a slice of mozzarella on top, and cover with another slice of eggplant, forming a small sandwich. This layering will provide a delicious flavor and an interesting texture.

Prepare a bowl with flour and another with beaten egg. Take each eggplant and mozzarella "sandwich," first dredge it in flour, ensuring it is evenly coated, then dip it in the beaten egg, letting the excess drip off. This layer will help form a crispy crust during frying.

Reheat the oil in the pan and carefully add the eggplant and mozzarella "sandwiches." Fry them over medium heat for 3-4 minutes on each side until golden and crispy. Once done, let them drain on a paper towel. Serve them warm, possibly with tomato sauce or a fresh salad on the side. Enjoy your meal!
