Preparation:
1. Start by preparing the fish. If using frozen fillets, allow them to thaw completely, then drain well. You can use a sharp knife to cut them into small pieces. This will help mix the ingredients evenly.
2. Heat a little oil in a pan and sauté the chopped onion and garlic until translucent, about 3-4 minutes. This step adds a wonderful flavor to your meatballs.
3. In a large bowl, combine the fish, sautéed onion and garlic, egg, breadcrumbs, feta cheese (if using), parsley, paprika, salt, and pepper. Mix well until you get a homogeneous mixture. It's essential not to overdo the breadcrumbs to avoid drying out the mixture.
4. Form the meatballs with wet hands to prevent sticking. You can make smaller meatballs for appetizers or larger ones for a main course.
