Once we have obtained a uniform mixture, we begin to incorporate the flour. At first, it is recommended to add about 10 tablespoons of flour, mixing gently. It is important to observe the consistency of the dough: if it is too soft, add flour, but in moderation, one tablespoon at a time, to avoid getting a dough that is too dry. The ideal dough should be soft and sticky, but not excessively so. After achieving the desired consistency, cover the dough with plastic wrap and let it chill in the refrigerator for 4 hours or even overnight, to firm up and meld the flavors.

After the resting time has passed, take the dough out of the refrigerator and place it on a floured work surface. Roll it out to about 1 cm thick, but you can go for a thinner thickness, depending on your preferences. Use a glass or special shapes to cut the cookies into various shapes, adapting to the occasion for which you are preparing these delights. The cut cookies are brushed with egg white, which will give them an appetizing shine, and sprinkled with unrefined brown sugar, which will add a slight crunchy texture.

The cookies are placed on the prepared tray and baked at a low heat until they become golden and fragrant. It is essential to remove them from the tray immediately after taking them out of the oven, to prevent moisture and maintain their crunchy texture.
