Stuffed Peppers, in the Freezer
Wash the peppers well under cold running water, ensuring that you remove any traces of impurities or pesticides. Choose healthy peppers, free from spots or damage, to achieve the best results. Carefully cut a small cap at the stem end, being careful not to ruin the shape of the pepper. Then, carefully clean them of the core and seeds, as these can influence the texture and taste of the final dish.
After you have cleaned the peppers, prepare a large pot of water and add a tablespoon of salt. Bring the water to a boil. Once the water is boiling, gently add the peppers, making sure they are completely submerged. Let them boil for 1-2 minutes, just enough to soften them slightly without cooking them completely. This blanching process will help retain the vibrant color and nutrients, while also making the subsequent filling easier.
After the blanching time has expired, remove the peppers from the water with a slotted spoon, being careful not to damage them. Place them upside down on a rack or in a bowl to allow the water to drain completely. Let them cool so that they are easier to handle.
Once the peppers have cooled, prepare freezer bags, labeling them accordingly. Place the portioned peppers in each bag, being careful not to overlap them too much to avoid them sticking together when frozen. Remove as much air from the bag as possible before sealing it to prevent ice crystals from forming. After you have sealed the bags, place them in the freezer.
These peppers can be stored without problems for up to 12 months, being a versatile ingredient that you can use in various dishes during the winter. When you want to use them, simply take them out of the freezer and let them thaw at room temperature. This process will preserve their flavor and texture, making them ideal for stuffing with various meat, rice, or vegetable fillings. Thus, you will always have a delicious and healthy snack on hand, even in the middle of winter.
