Mushroom Meatballs
To prepare these delicious mushroom meatballs, we start with the necessary ingredients. We need 500 g of fresh mushrooms, 1 egg, 100 g of flour, 50 g of breadcrumbs, 1 teaspoon of garlic powder, 1 medium onion, 30 g of butter, a handful of fresh parsley, 50 g of grated cheese (preferably sheep cheese or parmesan), salt and pepper to taste. Now that we have all the ingredients ready, let's get to work.
The first step is to clean the mushrooms. We remove the stems and any impurities, then wash them quickly under a stream of cold water. After they dry, we cut them into smaller pieces to facilitate cooking. In a pot, we add salted water and bring it to a boil. When the water starts to boil, we add the chopped mushrooms and boil them for about 4 minutes. This process will help them release their flavors and become more tender. After boiling, we drain them well and let them cool.
Next, using a blender or food processor, we chop the boiled mushrooms until we obtain a smooth paste. In a large bowl, we add this mushroom paste, the egg, flour, breadcrumbs, garlic powder, finely chopped and sautéed onion in butter, chopped parsley, and grated cheese. We mix all the ingredients well until they are homogeneous. Don't worry if the mixture seems softer; it's perfectly normal. However, if you want a firmer texture, you can add an extra tablespoon of breadcrumbs.
The next step is to form the meatballs. It is recommended to have wet hands with water to prevent the mixture from sticking to your palms. Take a portion of the mixture and shape it into a ball or disc, depending on your preference. After you have formed the meatballs, roll them in flour, making sure they are well coated.
In a deep frying pan, heat the oil over medium heat. When it is hot enough, add the meatballs, being careful not to overcrowd them. Fry them for 3-4 minutes on each side or until they become golden and crispy. Once they are ready, remove them onto an absorbent paper towel to remove excess oil.
Serve the meatballs hot, alongside a fresh salad or a garlic yogurt sauce. These mushroom meatballs are not only delicious but also a healthy alternative for everyday meals. Enjoy your meal!
