Caramelized onion soup is a classic, comforting dish, perfect for cool evenings or when you need a quick and delicious meal. This simple and tasty recipe combines the sweetness of caramelized onions with the rich flavors of beef broth, offering an unparalleled culinary experience. Additionally, served with toasted bread slices and Caciotta cheese, this soup becomes a true feast.

Preparation time: 15 minutes
Cooking time: 30 minutes
Total time: 45 minutes
Number of servings: 4

Ingredients:
- 4 large onions, sliced (ideally, choose sweet onions for a more pronounced flavor)
- 1/2 liter of beef broth (you can use store-bought broth or homemade for an authentic taste)
- 1-2 tablespoons of sugar (helps caramelize the onions, but adjust the amount to your taste)
- a few sprigs of fresh rosemary (or 1/2 teaspoon of dried rosemary)
- olive oil (to sauté the onions)
- a few slices of bread (choose a rustic bread for a crunchy texture)
- Caciotta cheese (or another cheese that melts well, such as Gruyère or Mozzarella)

Instructions:

1. Heat a large pot over medium heat. Add 2-3 tablespoons of olive oil. This will help caramelize the onions and add a delicious flavor to the dish.

2. Add the onion slices to the pot and sauté for 5-7 minutes, stirring frequently to prevent burning. The onions will start to become soft and translucent.

3. Sprinkle the sugar over the onions. Continue cooking, stirring occasionally, until the onions become golden and caramelized, about 15-20 minutes. This is when the flavors intensify, and the soup will gain amazing depth.

4. Add the beef broth to the pot along with the rosemary. Increase the heat and bring the soup to a boil. Once the soup is boiling, reduce the heat and let it simmer gently for 10-15 minutes. This step will help blend the flavors.

5. While the soup is simmering, prepare the toasted bread slices. You can use a toaster or a grill to make them crispy. Once toasted, place slices of Caciotta cheese on top and let them melt slightly under a broiler or in the oven.

6. Taste the soup and adjust the seasonings to your liking. You can add salt and pepper to taste.

7. Serve the hot soup in bowls, with the toasted bread slices with cheese on the side. A sprig of fresh rosemary can be an aesthetic and aromatic touch.

Practical tips:
- For a more complex flavor, you can add a splash of white wine during the caramelization of the onions.
- Instead of rosemary, you can experiment with other herbs, such as thyme, to change the flavor profile.
- If you prefer a spicier taste, add some red pepper flakes during cooking.

Personal note: This caramelized onion soup is perfect for serving at a casual dinner, but it can also become an elegant dish for a special occasion just by adding some flavored croutons or slices of truffle oil for an extra touch of refinement. Enjoy every spoonful of this delicacy!
