Tosca Cake
Toasca Cake – a delicacy that combines the fine texture of the base with a rich cream, all soaked in a fragrant syrup, perfect for satisfying your sweet cravings. This recipe, which I will share with you, is a delicious variation of the cake you find in pastry shops, but with a more intense flavor and a perfect consistency.
Preparation time: 20 minutes
Baking time: 20-30 minutes
Total time: 50-60 minutes
Number of servings: 12
Ingredients:
*For the base:*
- 4 large eggs (ideally at room temperature)
- 100 g granulated sugar
- 2 tablespoons quality cocoa (for an intense flavor)
- 4 tablespoons flour
- 50 ml oil (preferably sunflower or canola oil)
*For the syrup:*
- 200 ml water
- 100 g sugar
- 1 vial of rum essence (for an irresistible fragrance)
*For the cream:*
- 200 g sugar
- 50 ml milk (you can use whole milk for a richer cream)
- 2 tablespoons cocoa
- 150 g butter (at room temperature for easy incorporation)
- 2 eggs (separate the whites from the yolks)
- 1 vial of rum essence (optional, but recommended for extra flavor)
*For decoration:*
- 200 ml whipped cream
- 2 teaspoons powdered sugar (to sweeten the cream)
Preparation:
1. Preparing the bases: Start by preparing the baking pan (30/40 cm) by lining it with baking paper. This is an essential step to prevent the cake from sticking. In a large bowl, beat the eggs with the sugar until the mixture becomes frothy and doubles in volume. This is the moment when air enters the mixture, contributing to a fluffy texture.
2. Incorporating the oil: Gradually add the oil, mixing with a spatula from bottom to top. This step is important to maintain the aeration of the mixture. Then, incorporate the cocoa and flour, mixing gently to avoid losing air from the mixture. Make sure there are no lumps of cocoa.
3. Baking the bases: Pour the mixture into the prepared pan and place it in the preheated oven at 180 degrees Celsius. Bake for 20-30 minutes, but don't forget to do the toothpick test to check if the base is baked. A toothpick inserted in the center of the base should come out clean.
4. Preparing the syrup: While the base cools, place the water and sugar in a saucepan over medium heat. Boil the mixture until the sugar completely dissolves and the syrup acquires a slightly viscous consistency. Let it cool, then add the rum essence for a wonderful taste.
5. Preparing the cream: In a heavy-bottomed saucepan or double boiler, combine the sugar, milk, cocoa, and butter. Boil the mixture, stirring constantly to prevent sticking. Once the cream has thickened and is homogenized, remove it from the heat. Add the yolks, mixing quickly to avoid coagulation. This is when the cream becomes rich and velvety.
6. Assembling the cake: Once the base has completely cooled, cut it in half. Move to the first half and pour some syrup evenly over its surface, then add half of the cream. Place the second half of the base on top, again pouring syrup and putting the rest of the cream on top. Let the cake chill in the fridge for at least 30 minutes to allow the flavors to blend perfectly.
7. Preparing the whipped cream: Whip the cream with the powdered sugar until soft peaks form. This step adds a pleasant texture contrast to your cake.
8. Decorating and serving: Place the cake on a serving platter and decorate with whipped cream on top. You can also add some chocolate flakes or crushed nuts for a more festive appearance.
Useful tips:
- Make sure all ingredients are at room temperature for easier incorporation.
- You can experiment with different flavors for the syrup, such as vanilla or almond.
- If you want a healthier version, you can replace the sugar with a natural sweetener.
Nutritional benefits: This cake, although an indulgent dessert, contains ingredients such as cocoa and eggs, which provide antioxidants and proteins. Consumed in moderation, it can be part of a balanced diet.
Frequently asked questions:
- How long can the Toasca cake be kept? Stored in the fridge, it can last up to 3 days, but it is best consumed fresh.
- Can I use other types of oil? Yes, but avoid oils with strong flavors, such as olive oil.
Ideal combinations: I recommend serving the Toasca cake with a fruit tea or a flavored coffee, which will complement and highlight the sweetness of the cream.
