Salmon on a Bed of Spinach
Spinach is an extremely nutritious and versatile vegetable, and this simple and delicious fish and spinach recipe is sure to become one of your favorites. Start by washing the spinach thoroughly under cold running water, making sure to remove any impurities. Place it in a pot of boiling water and let it boil for 3-5 minutes until it softens. After boiling, drain the spinach in a colander, allowing it to cool slightly before squeezing out the excess water. This step is essential because well-drained spinach will prevent the final dish from becoming too wet.
While the spinach cools, you can prepare the oven. Preheat it to 180 degrees Celsius so that it is ready when your food is prepared for baking. Take a baking tray and line it with parchment paper to prevent the dish from sticking and to facilitate later cleaning. Spread the drained spinach evenly on the bottom of the tray, creating a healthy green base for the fish.
Then, choose a fresh fish, such as cod or salmon fillets, and carefully place it on top of the spinach. The slightly salty taste of the fish will perfectly complement the flavors of the vegetable. In a small bowl, combine the olive oil with the sour cream until you achieve a smooth emulsion. Pour this mixture over the fish and spinach, making sure everything is well coated. Now comes the interesting part: season the dish with salt, pepper, and thyme to taste. Sliced garlic will add a delicate yet distinct aroma that will envelop the entire dish.
To finish the dish, grate feta cheese, cottage cheese, or parmesan on top, depending on your preferences. This layer of cheese will form a delicious and golden crust during baking. Place the tray in the preheated oven and let it bake for about 25 minutes, or until the fish is fully cooked and the cheese is browned.
Finally, remove the tray from the oven and let the dish cool slightly before serving. This main course can be accompanied by a fresh salad or mashed potatoes, providing you with a balanced and flavorful meal. Enjoy every bite!
